Transmitter, transmits light ( LED) and receiver (photo sensor) will receive and generate the voltage on output. Generated voltage signal depends on the light reflected from the surface color. By calibrating measurement. We can use it for precise color detetion.

adding up to Faiz’s description…if detecting single color under controlled environment, any intensity based photodiode or LED may be used…but if target is to detect RGB spectrum, it’s best to use photo sensor with RGB filter option and white LEDs should be more optimal to use.
