Hi Steven Reubenstone. The best motors for this kind of project would be aeromodelling brushless DC motors.

I’m worried about the weight and the thrust though. Fan propellers are inefficient when it comes to generating a lot of thrust. I suggest you to use double bladed pusher type propellers. And keep the thrust to weight ratio well above 1.1. Otherwise, the motion will be like that of a road roller, as it cannot overcome the friction between the wheels and the ground.

Another thing to note is the prop diameter. It will be big, like 6 inches and above.

A typical 1600 kv RC model motor with a 5 inch diameter propeller gives about 300 gram-force of thrust when connected to a 2S Li-po battery. For best results, the all up weight of the model airplane must not be above 250 grams. Hence, for this project, I think you would need quadcopter propellers and motors.

Use a EDF motor. Will be sleek to fix and easy to maintain the CG.

What about braking? Momentum will be too much as velocity of EDF is high.

Also, EDF motors are costlier than motor & prop combo.
